I wann to have the fan running constantly and only shutoff
when override, but it will turn back on after eg, 5 , or 10 minutes

there is not preset off time, I wanna to be able to turn it off at any time
and it will turn back on automatically.most timer nowaday are auto-off.

One simple solution would be to use a "delay on make" timer. You'd be
able to turn the fan off and immediately back on, but it wouldn't
start again until the delay time expires. There are hundreds of
models, the most common and inexpensive are probably the fixed-time
types used in HVAC applications. About $10. This should get you
started

simple , use a Pneumatic time lag sw ,wire the fan live to com and fan
to nc contacts , these are normally used for out side lights and stair
wells etc... but for the inverse function . please bare in mind that
these may not be suitable for mounting in a bath room and may have to be
located out of the room as per local reg's .
when I googled " Pneumatic time lag switch " google came up with the
first page of uk listings so these may be a uk only part ?
all of this may or may not be of help depending were you live .
just wandering , why do you need to operate the fan like that ?

See

you need SPDT such as FD32H
Use the normally closed contacts that oped during the timing.
