I would like to attach the bare wires of a hard case LED strip to this connector but worried about water seeping in (bathroom).
What are my options insulating this connector?

Water seepage from where? If the strip is mounted out of the direct path of splashes or running water there shouldn't be an issue but if you have any concerns then adhesive-lined heat shrink sleeving would make an effective seal although I'd personally use a directly soldered connection with sleeving over each - and also both - soldered connections.

Water from shower. The strip is situated against a ledge 10 cm off the black bathroom floor, making it easier to see the step down for an old man like me.

Thank you for your advice, I shall carry it out as soon as I can find out what "adhesive-lined heat shrink sleeve" looks like so as to explain to the Thai shop what I am looking for.
