If I'm using a splitter to power two 12V 1 amp LED lights, do I need a 2 amp power source or is the original 1 amp source that comes with the lights still good to use?

What do you mean by a splitter? All you need is to wire both to the power supply. But no, of course, a 1A unit will not power 2 1A devices. You need at least 2A and 3A would be better so as not to stress the power supply which probably came from China and is rated shall we say, optimistically.
