Ribbon cable length causes noise for displays why?

This is impossible to answer generally. If it's a clock, then the answer is "a clock"

I mean in general or common from your experience or what you have seen on schematics

you have seen a clock signal going to the display drivers

I thought LCD and LED displays needed decimal, hexadecimal or binary to work?

Danny, What goes before the drivers is whatever is required to create the signals needed. If the device is a digital clock, the stuff before the drivers is the electronics that counts seconds, minutes, and hours and decodes this in a way suitable for display. In short it's a clock.
