Removing low-voltage cutoff from scooter controller

As my first post I want to say hi and get started with my project. I have a ride-on kids gator and the stock setup is an on/off low and high speed powered by a 12V battery. What I'm after is to run a scooter controller and hall-effect pedal but would like to use the 24V controller under the 20.5V low voltage cutoff.

Another option is to build a high-current controller or speed control that can handle 40-50A @ 12V. With the stock 550 size motors it will pull about 25 amps on the larger hills and with the upgraded 550 motors it will pull 40A easy on the driveway going uphill and sometimes tripping the 40A breaker.

24V scooter controllers are relatively inexpensive and I will likely upgrade to 18 or 24V but for time being I would like to use 12V and the softer on/off and higher current capability of the ESC.

What mods can be performed to the scooter controller to remove the limit circuit? Would this be a simple task or is it even possible?
