Hello, Does anyone have a pinout and circuit of the headset/shoulder
mic pinout for the single 2.5mm jack radios?

Is there anything special about those headset? I would think a standard
2.5mm heaset wouls work.

Actually, not. The pinout is the same, but Motorola added a few
millimeters to the sleeve length which mandates using branded
accessories. IIRC, the actual jack is standard, it's just set a little
further down into the body of the device.
