I have been looking for a Flash Memory IC that can hold 2 mega BYTEs or more.
Only thing that I have been able to locate is Multimedia Cards (MMC) which
would be nice except for the fact its not an IC Chip. I need something that can
be soldered directly to a PCB. It is going to be in a high vibration
environment.

Atmel dataflash - serial interface, up to 128Mbit, 8-pin SOIC.

Take a look at Intel's Strata flash. These are available. I used to
have some 16MB (megabyte!) devices as samples. These are quite fast as
well (burst-page mode).
