Making an oven/dehydrator

Hello all,

I'm new to this forum,and was wanted to get some advice on how to complete my home-made oven. For some background:

1. I wanted to build a large (commercial size) dehydrator to process the many pounds of fruits/vegetables I get

2. Given that I'm 100x more skilled at wood working than electrical stuff (and that's not saying much), I've created a design schematic of how it will look.

3. I've procured 600W coils that I will somehow connect to porcelein bases.

4. I've procured convection fans that will also be used, which are connected to a computer power supply and have a normal a/c plug

5. MY IMPASSE: Thermostat and temp controls ... I'd like to install a thermostat as well, to regulate the temperature between 100 and 200 degrees Farenheit.

QUESTIONS: Where do I get that? Can I just cannibalize an old toaster oven? How would I hook it up to the heat source? Am I going to kill myself in the process?
