Military and aviation grade cable and wire would probably have a more pure grade conductor, less inpurities in the wire. And the installation would also be superior In many high grade cable and wire.

Having said that, very good quality cable and wire is avaliable for the retail market, and general consumer. Unless your requirements are super speacialied, then any safe rated wire / cable will serve the purpose you intend to use it for.

What's the difference, conditions/wear and tear?

yes wear and tear -- resists chafing/ abrasion much better
fire resistant
its working at 400V rather than the low voltages found in most domestic and home projects

to name a few things

MIL-SPEC ( Military Specification) is a high quality standard used in many specialist industries
for cables, connectors and components.
In my work, servicing heavy industry DPS equipment, all the cables and connectors are MIL-SPEC
because they are used in high temperature and high vibration environments

it's not just the conductors. Almost more importantly, it's what protects the conductors ... the insulation and sheathing

Yes I did mean insulation, dam auto correct spelling lol. Retail wire and cable in almost any application should be more than adequate, having the correct cat and rating goes with out saying.
