elp w/power driver please

    Can any of you suggest the best way to control a couple of hot plates with a REX C-100 temp controller? It has a 12 volt output.....it is a PID controller so the voltage pulse on/off time varies depending on the deviation from set point. The hot plates are 1100 watts each so I would like to build it heavy, so say 3000 watts and they can be on the same circuit. I was thinking of a simple SCR circuit, or as simple as possible, but I don't quite know how to best put it together. it is for my meat smoker that made from an old refrigerator and made some of the most assume bacon this past fall when we slaughtered our pigs. at the time I controlled it manually and want to add better control.
