convert MT food pedal to hand control

I am new here and not an electronics geek at all. What I want to do is take my Infinity food pedal that I used to control the dictation in my medical transcription job and convert it to a smaller piece that would be controlled on my desk by the heel of my right hand (so I can work on a treadmill). It would ideally be of a size equivalent to part of my wrist rest, maybe 6 in long and 2 inches wide, 3/4 of an inch deep. The middle approximately 4 inches would be pressed by the heel of my right hand to run the dictation, and the remaining space, approximately an 1 inch on each end would forward and reverse the dictation when pressed (forrward one end, reverse on the other).

Can anyone suggest how I might start/accomplish this project please? I would be hugely appreciative. This has to be totally a hardware procedure - No software can be loaded onto my work computer.
