I have two deep cycle batteries that are for backup power (with an
inverter) during outages. I charge them once a week and check the
voltage every day. Is it normal for the self discharge rate to be
slightly higher when the humidity is high?

If the humidity is higher because it is summer, yes. Since in summer the
    temperature is higher.
The self-discharge is higher at higher temp.
