Does the TV have stereo line outputs? If so just get an
    RCA-to-stereo-headphone adaptor cable.

Good point Ken. I have considered this as a first option, before
dissecting a brand new TV. I do have one set of AV outputs in the
rear of the TV(L Audio, R Audio, Video). I had a suspicion that I
would still get volume from the TV speakers, after plugging into the
rear RCA jacks with the adapter hookup. If these are true line out
jacks, I should be able to get a signal through them to my headphones,
even though the TV volume is set to zero? The jacks are not labeled
as "Line Level". It's an Apex TV, so the information for different
configurations leaves a lot to the imagination. I think the adapter
is only three or four dollars, so it would probably be a wise choice,
since the alternative option is surgery, and it's potential
    complications.

The TV audio output level impedance matches any amplifier auxiliary input .
But as you suspect the TV sound to the speaker is not disabled .
To overcome this , I build a small stereo amplifier using two LM324 with
dual input (10K)level control ,powered by a 9 volts battery .The
amplifier is set to maximum amplification with the use of the 10K and 10uF
    feed back as required .
Use RCA cables to the amplifier and a the required stereo output plug for
    your headphones.
Set the TV volume output as low as possible and adjust the amplifier input
    volume to suit .
With Headphone on you will not hear the TV speakers , but will be able to
use all the TV sound control to yoyur headphone .
